Brogue loves a top table, and Spain’s Basque country is brimming with them. The decor here is blissfully pared back, with floor-to-ceiling windows framing the view over the Bay of Biscay, and Bang & Olufsen TVs and sound systems as standard; there’s also a 9000-square-foot spa, and – if you book one of the two suites – your very plunge pool, should you feel the need for a quick dip between lunch and dinner.
